Noodles are very soft and smooth because flour is kneaded with sufficient water content to enhance formation of gluten and they ard aged at a proper temperature. 1. Put more than 2 liters of water into a pot and boil it. 2. When the water is boiling up, put noodles into the pot, and stir them. 3. After boiling noodles for about one minute and a half or two minutes over the strong fire, put a glass of water into the pot and boil them for more thirty minutes. 4. Then, rinse boiled noodles in cold water while rubbing them two or three times. 5. Remove water and make a coil of noodles. You can enjoy noodles by putting them into a prepared stock or in other manner as you like.
* You can enjoy better taste by putting noodles into a yellow tea stock. |
